Looks like it's fully resolved for now at least. I haven't had the issue again since updating Nvidia drivers - if anyone has the same issue, I'd recommend updating drivers (especially display drivers), and any other updates available. Will mark this thread as solved.

Ty for this - I've updated to the latest Nvidia driver and haven't had the issue the last few days, so maybe it is Nvidia related after all. The issue has always been a bit intermittent though, so I'll see if it reappears. Will report it as a Chromium bug, although it's a bit niche so can't...

Interesting - did you find a report from other users? I've tried closing GeForce and don't seem to get any luck - the only time it seems to change is sometimes when waking the PC, it reverts back to the correct behaviour. However when the screen next sleeps and comes back the incorrect behaviour...
