The only place you find "Uninstalled processes" is under the App History tab, because they are not running, they have been uninstalled. You won't find them under the Processes tab, because they aren't processes (they used to be) they have been uninstalled.
The big numbers you see (under the App History tab) for CPU time and Network, are history, before the processes were uninstalled.
So, go to the App History Tab, then click on the menu icon (three lines) at the top. You should see a link that says "Delete usage history". Click that. Everything in App History will go to zero CPU time, and 0 MB Network. Uninstalled processes will go away, because they are not running and not using any resources.
