Yeah extending the windows definitely seemed to make the difference - so fingers crossed that future updates will be installed without issues.
As for the other maintenance windows - further research reveals that they indeed are user-based (user-defined) windows (and NOT maintenance windows) - aka. business hours.

It looks like this - in Software Center - on this particular server (see image below)
The only thing that strikes me is the fact that I have 8 entries in my screenshot in #37 - but only have 5 "ticks" in the below screenshot.
I would expect to have 5 entries instead of 8 - and the start/end time does not correlate comparing the screenshot in #37 and the one below..
Oh well as per Jason Sandys answer - if type = user-defined - it is NOT a mainteance window
So be it.
Anyways - I'm gonna mark this as solved.
Thanks a bunch for your help Sunfish (and Maxstar) - Support Center is most definitely going to part of my toolbox going forward
I'm gonna use it in the near future - on another troublesome server.
Not long ago our company acquired another company - and someone had the brilliant idea of importing a virtual server into our vCenter environment.
The foreign server was previously managed by another SCCM setup - and does not seem to play nice with our setup - and hence need to manually patched every month.
Hopefully Support Center can help me identify what's going on.
The foreign server is running Business Central - and nobody feels really keen on setting that up again - should we rebuild the server.
