OK I think I've finally got to the bottom of the source of all of these corrupted files! I had Windows tell me that my drive had errors and I need to run chkdsk. I ran it, and it fixed some errors. But it started to make me wonder so I downloaded some tools to check the status of my SSD and it came up with a bunch of warnings. I immediately went out and bought a replacement drive and restored my old drive to it. So far things seem to be running a little better. I ran sfc again but it still found some errors. I think that once we resolve these last issues I should be all set and we'll no longer be working with a broken drive that was seemingly continuously causing files to get corrupted.

Anyways, I can't thank you enough for all of your help. In case you run across another user that might be experiencing this never-ending set of corrupt files you may want to direct them to check the status of their drive. I used a tool called CrystalDiskInfo.

I've attached the cbs log file after running sfc once more (hopefully last time). Thank you.

Quick update: just after my last post, Windows prompted me to reboot (looks like Windows Update is actually able to do something now which is progress!). However, during the reboot Windows showed the "installing updates don't power off your computer" and then it seemed to do a bunch of stuff. After a couple of automatic reboots it said it failed to complete the install so it was going to rollback the changes. When it finally booted back into Windows I got a notification that some updates failed. The Windows Update history looks like this:

OK, here's the CBS log. It looks like Windows Update went ahead and installed some updates for MS Office so I don't know if this includes the log data for the previous failures.

I will follow your instructions and try this all again and let you know how that goes.

Please try to install one of the Windows Updates. If it fails, zip and attach C:\Windows\Logs\CBS\CBS.log with your reply.
 
It looks like all updates have been installed successfully!!! I reboot my machine and everything looks good. Wow I can't believe this is working after all of this time. Thank you so much for your help.
