I'm pretty sure I have the latest, 3.40. How do I ensure my chipset drivers stay up to date, other than checking AMD's website periodically?

There shouldn't be any other problems about it.
You can check it once a year.
Or use a driver updater software to let you inform about new drivers updates.
Just to inform you, but not use their links: go directly to the manufacturer website.
It seems kcsoftwares dumo free is quite precise (about updates).
Check this topic for more details (click).

I've been using DUMO for a bit now; I find it difficult to find the newer versions of the drivers it references. Check the attached screenshot showing what it suggests I should still update. Which of these is the Chipset Drivers by the way?

Based on your linked thread, I'm going to give the Iobit Driver Booster a shot too...

Right, so I installed those and restarted, which reactivated my previously disabled built in WIFI. This caused the same BSOD with ntoskrnl.exe and pci.sys! I think I'm just going to leave the MOBO WIFI disabled, I have a feeling it's causing the problems.
 
Not sure if the BSOD should happen or not with that version, just try it (I can't try it in first person, because obviously I don't have your exact configuration).

Went to burn a bluray disc (heave forbid I try something like that!) and got another BSOD. I'm going to permanently disable the onboard WIFI to rule it out in the future. I attached the zip file from the Sysnative app, the dmp itself, and the txt explanation from BlueScreenView.

According to dumo, your system misses only the newer standard ahci 1.0 sata controller.
Go to device manager, individuate it and right-click --> update driver.

I'm far less concerned right now with getting the onboard WIFI working. I tried to auto-update in device manager and it claims it's recent. I have the PCIE Wifi that's better/faster/more reliable, so I could leave onboard disabled. I'm more concerned why this BSOD occurs with DRIVER_IRQL_NOT_LESS_OR_EQUAL. it happened again this AM on boot...

It hasn't found any integrity violations. I have at least one BSOD a day at this point. Last it happened when I tried to play Call of Duty. The time before that, I was listening to Spotify. It's seemingly completely random, and nothing has fixed it. I've had the onboard WIFI disabled this entire time, so that's certainly not it. So with no changes making affect, I'm going to downgrade my BIOS to 2.50 and see if that does anything. I'm all out of patience and ideas.
 
Kindly interesting that this problem happened with me
i tried
  • Change PCI-E slot
  • Change memory slot
  • Reset Bios
  • Update Bios
  • Overcloak everything to max (4 GHz CPU, 3 GHz memory 15-15-15-30)
  • Downclock everything to min (3 GHz CPU, 1.8 GHz memory)
  • Reinstall OS
  • Reinstall driver (LAN, chipset, video) via setup.exe
  • Install old video driver
  • Buy another video card

Some kind of solution was to reset CMOS and delete Intel LAN driver (and app) and reinstall it via Device Manager (instead of setup.exe)
Problem still happens if i start around 20-25 apps that parsers logs files, but until mid december i didn't encounter this problem (and i use Ryzen 1700x since Marth) and since then, until BSOD i didn't changed anything hardware wise
