Can you copy the manifest file manually to: C:\Windows\SoftwareDistribution\Download\ffa5d0c7902ef50b9376165d55df04e2\inst and retry updates?

Updates is working okay now, you got that working for me. Installing new roles/features is what's still failing - just doble checking that's not for another post?

Here you go. Just to make sure I handled the manifest correctly - I just dropped the "Manifests" folder from your zip file into that directory so let me know if that was wrong.

That was incorrect. You need to copy the file itself, otherwise it will not work.

Open the Manifests folder and copy the manifest file into the directory, then retry roles.
